Why is sand used when groundnuts are roasted?

Sand readily absorbs heat and holds on to it for a long time. It can be heated to a fairly high temperature too. If groundnuts are fried in a pan without sand their shells get charred before the nuts inside can get roasted. Frying them in sand ensures that they get evenly heated and that the nuts inside get roasted without the shells getting scorched.
