Delicious creamy tomato soup made without cream. Winters is the season of soups. The soup has a creamy, smooth consistency with a light tanginess from the tomatoes.
Ingredients
- Tomatoes diced: 4
- Water: 5 cups
- Ginger crushed: 2-inch piece
- Finely chopped coriander leaves: ¾ cup
- Cream: 1/2 cup
- Butter: 1 tbsp
- Salt and pepper to taste
- Croutons or pieces of crisp fried toast
Method:
Heat butter and saute tomatoes. Mash with a fork, add ginger, coriander leaves, salt, pepper and water and boil for 10-12 minutes. Pass the mixture through a sieve. Reheat and add cream. Serve hot garnished with croutons.
