How do you make tomato cream soup?

Delicious creamy tomato soup made without cream. Winters is the season of soups. The soup has a creamy, smooth consistency with a light tanginess from the tomatoes.

Ingredients

  • Tomatoes diced: 4
  • Water: 5 cups
  • Ginger crushed: 2-inch piece
  • Finely chopped coriander leaves: ¾ cup
  • Cream: 1/2 cup
  • Butter: 1 tbsp
  • Salt and pepper to taste
  • Croutons or pieces of crisp fried toast

Method:

Heat butter and saute tomatoes. Mash with a fork, add ginger, coriander leaves, salt, pepper and water and boil for 10-12 minutes. Pass the mixture through a sieve. Reheat and add cream. Serve hot garnished with croutons.
